@matildadjerf’s Carrot Cake Recipe

Today we show you the recipe of @matildadjerf’s carrot cake. The carrot cake is the greatest classic of vegetable pastry. The origins of this dessert date back to the Middle Ages when sugar was very expensive, people have found a substitute, carrot. Later it has become a world famous cake.

INGREDIENTS :
CAKE
3 eggs
2 1/2dl sugar
1/2dl brown sugar
3dl flour
3 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1 1/2 tsp cardamom (optional)
1 tsp vanilla sugar
400g carrots
1 1/2dl rapeseed oil
FROSTING
70g butter
140g cream cheese
Lime zest from one lime
3dl icing sugar
RECIPE :
First, preheat the oven to 180 degrees celsius.
Mix thoroughly the eggs, sugar and brown sugar together. The dough should be very fluffy.
Then, mix together the flour, baking powder, salt, cinnamon, cardamom (optional) and vanilla sugar.
Afterwards, hand grate, use pre-grated carrots or use a food processor and add rapeseed oil. Mix everything together.
Place the cake in the middle of the oven for 50-55 minutes. If your oven is very hot, leave it for 45 minutes. To check if the cake is cooked enough, take a knife and make a small hole in it. If the knife comes out without dough on it, it is ready. Let cake cool off completely before adding frosting on.
Mix together (easiest with an electric mixer) the butter, cream cheese, lime zest and icing sugar. Taste and dose it as you like. Put the frosting on your cake and enjoy!
